Mum’s Potato Salad
I asked my mum for her potato salad recipe. My salad looked a bit different to my mother's version as I tend to leave the potato peel on and we couldn't get the proper bacon for this, but it still was delicious. Let me share the recipe with you:
- Feeds: 2 to 3 people
- Eat with: Bratwurst
- Takes 30 minutes to prepare
Ingredients
- 1/2 kg of new potatoes, not too soft or hard
- Sauce:
- 1 teaspoon of salt
- some freshly ground black pepper
- 1 tablespoon of white wine vinegar
- 1/2 teaspoon of sugar
- 1 smallish onion
- 1 gherkin or several cornichons
- 1 to 2 tablespoons of mayonnaise
- 1 teaspoon of oil
- a little warm water
- 100 g smoked bacon bits
Preparation
- While you are boiling the potatoes prepare the sauce in a bowl that's big enough to hold the entire salad.
- Cut the onion into small pieces, and the gherkin into slices. Mix all sauce ingredients until the sauce has a consistency that's in the middle between water and mayonnaise. When the potatoes are ready, cut them into slices and put them into the sauce straight away so that the warm potatoes can suck up all the taste. If the salad should get too dry add a little warm water.
- Take a frying pan and heat the smoked bacon bits gently so that the lard starts to get liquid. Pour the bits together with the lard over the salad. Yummy and ready to eat!
