Great for kids: prawns in aromatic spinach

This recipe is a mixture of something I found in an African recipe book and my own ideas as I needed to make it quicker to prepare.

Preparation time: appr. 30 minutes

Ingredients:

  • 2 tablespoons of sunflower oil
  • 200g frozen leaf spinach (can also be creamed spinach if available)
  • 1 small onion (optional) cut into small pieces
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon of coriander seeds
  • 1/2 to 1 teaspoon of garlic powder
  • 1/2 teaspoon of cinnamon powder
  • 1 teaspoon of paprika powder
  • a little ground black pepper (optional)
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of ground turmeric
  • a little chilli powder (optional)
  • salt to taste
  • 1 sachet (50g) of creamed coconut
  • 200ml of full fat milk or single cream (not necessary with creamed spinach)
  • 100g frozen prawns

Preparation:

  1. Heat up the oil in a large sauce pan.
  2. Add coriander seed, thyme and if so wished the onion. Fry for a couple of minutes.
  3. Add the frozen spinach and cover the pan. Cook on medium heat for 10 minutes or until spinach has thawed completely.
  4. Add the other spices and the creamed coconut. If using leaf spinach mix with a food blender to create a smooth mixture.
  5. Add milk or single cream to make sure the mixture stays quite liquid.
  6. Add the frozen prawns and cover the pan. Leave to simmer on low heat until all the prawns are tender.

Serving tips:

Serve with Basmati rice.
