Great for kids: prawns in aromatic spinach
This recipe is a mixture of something I found in an African recipe book and my own ideas as I needed to make it quicker to prepare.

Ingredients:
- 2 tablespoons of sunflower oil
- 200g frozen leaf spinach (can also be creamed spinach if available)
- 1 small onion (optional) cut into small pieces
- 1/2 teaspoon of thyme
- 1/2 teaspoon of coriander seeds
- 1/2 to 1 teaspoon of garlic powder
- 1/2 teaspoon of cinnamon powder
- 1 teaspoon of paprika powder
- a little ground black pepper (optional)
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of ground turmeric
- a little chilli powder (optional)
- salt to taste
- 1 sachet (50g) of creamed coconut
- 200ml of full fat milk or single cream (not necessary with creamed spinach)
- 100g frozen prawns
Preparation:
- Heat up the oil in a large sauce pan.
- Add coriander seed, thyme and if so wished the onion. Fry for a couple of minutes.
- Add the frozen spinach and cover the pan. Cook on medium heat for 10 minutes or until spinach has thawed completely.
- Add the other spices and the creamed coconut. If using leaf spinach mix with a food blender to create a smooth mixture.
- Add milk or single cream to make sure the mixture stays quite liquid.
- Add the frozen prawns and cover the pan. Leave to simmer on low heat until all the prawns are tender.
Serving tips:
Serve with Basmati rice.
